HERBSTLICHE KÜRBIS FETA PASTA

A delightful autumn pasta dish featuring tender pumpkin and salty feta. Perfect for a cozy weeknight meal, this recipe is quick to prepare and bursting with seasonal flavors.

  • Pasta, your favorite kind (Spaghetti, Penne, or Fusilli)
  • Pumpkin, Hokkaido or Butternut
  • Feta cheese, crumbled
  • Olive oil, extra virgin
  • Garlic, fresh
  • Parsley, fresh chopped
  • Pepper and salt, to taste

  1. Bring a large pot of water to a boil and add salt generously.
  2. Add the pasta and cook according to package directions until al dente.
  3. Cut the pumpkin into small cubes.
  4. Preheat a pan over medium heat and add a little olive oil.
  5. Sauté the pumpkin cubes for 10-15 minutes, or until tender and lightly caramelized.
  6. Add the finely chopped garlic shortly before the pumpkin is done cooking.
  7. Sauté the garlic for about 1-2 minutes until fragrant, being careful not to burn it.
  8. Drain the cooked pasta, reserving about a cup of the cooking water.
  9. Add the cooked pasta to the pan with the pumpkin cubes and add some of the reserved cooking water as needed.
  10. Mix everything well and sprinkle the crumbled feta cheese over the top.
  11. Gently toss the dish to combine.
  12. Serve the AUTUMNAL PUMPKIN FETA PASTA on plates.
  13. Garnish the dish with freshly chopped parsley and another drizzle of olive oil.
