  • 200 g Oats
  • 100 g Flour
  • 120 g Sugar
  • 150 g Butter or margarine, soft
  • 120 ml Lemon juice, freshly squeezed
  • Lemon zest from 1 lemon
  • 2 tbsp Agar-agar
  • 1 tsp Baking powder
  • A pinch of salt

  1. Preheat oven to 180 degrees Celsius.
  2. Grease or line a rectangular baking pan (approx. 20 x 30 cm) with parchment paper.
  3. In a large bowl, combine 200 g oats, 100 g flour, 120 g sugar, and 1 tsp baking powder.
  4. Add 150 g soft butter or margarine and mix well until the mixture is crumbly.
  5. In a separate bowl, combine the juice of two freshly squeezed lemons (approx. 120 ml), the zest of one lemon, and 2 tbsp agar-agar.
  6. Stir everything well and let it stand for a short while.
  7. Press about two-thirds of the oat mixture from step 2 evenly into the bottom of the prepared baking pan.
  8. Pour the lemon mixture evenly over the oat mixture.
  9. Sprinkle the remaining part of the oat mixture over the lemon filling and distribute evenly.
  10. Bake the bars in the preheated oven for about 25-30 minutes, or until golden brown.
  11. Let the bars cool completely in the pan.
