Low Carb Blumenkohl Frikadellen

  • 1 large cauliflower, fresh and firm
  • 2 eggs, fresh
  • 100 g grated cheese, mild (e.g. mozzarella or gouda)
  • 50 g almond flour, unsweetened
  • 1 tsp salt, high-quality sea salt
  • 1 tsp pepper, freshly ground
  • 1 tsp paprika powder
  • Fresh herbs (e.g. parsley or chives), finely chopped

  1. Cut the cauliflower into florets and steam in a steamer or in a pot with boiling water for about 10 minutes.
  2. Drain the cauliflower and let it steam well.
  3. Place the steamed cauliflower in a bowl and mash well with a potato masher or fork until it forms a smooth mass.
  4. Let the cauliflower mixture cool slightly.
  5. Add eggs, grated cheese, almond flour, salt, pepper, and paprika powder to the cauliflower mixture.
  6. Stir everything thoroughly until all ingredients are well combined.
  7. Using your hands, take small portions of the mixture and form them into flat patties.
  8. Place the patties on a baking sheet lined with parchment paper.
  9. Preheat the oven to 200 degrees Celsius.
  10. Bake the patties for about 25-30 minutes until golden brown, carefully turning them over halfway through.
  11. Remove the freshly baked patties from the oven and let them cool briefly.
  12. Serve the patties warm with a dip of your choice.
