  • 500 g Quark, well-drained
  • 200 g Flour, all-purpose or spelt
  • 150 g Sugar
  • 3 tsp Baking Powder
  • 1 tsp Vanilla Extract
  • 200 g Dried Fruits (e.g., apricots or cranberries)
  • Cinnamon (to taste)
  • Vegetable Gelling Agent (e.g., agar-agar)

  1. Prepare the quark by draining it well and placing it in a large bowl.
  2. Loosen the quark with a fork.
  3. In a separate bowl, thoroughly mix the flour, sugar, baking powder, and cinnamon.
  4. Add the vanilla extract to the quark and stir until the mixture is homogenous.
  5. Slowly pour the dry ingredients into the bowl with the quark.
  6. Gently fold everything together, being careful not to overmix.
  7. Add the dried fruits to the dough and carefully fold them in.
  8. Grease a loaf pan or line it with baking paper.
  9. Fill the dough into the prepared loaf pan and smooth the surface.
  10. Bake the Konfekt at 180 degrees Celsius (convection) for about 40-45 minutes, or until a wooden skewer inserted comes out clean.
  11. Let the Konfekt cool slightly before cutting it into uniform pieces.
